Peel tomatoes

If you want to peel Marmande tomatoes, score a cross in the bottom of each tomato with a knife, then briefly dip them in boiling water followed immediately by cold water. The skins will then slip off easily.

Ripen tomatoes faster

Are your tomatoes still too firm to eat? Help them ripen faster by placing an apple next to them for a few hours or up to a day. Apples produce ethylene, which speeds up the ripening process in tomatoes.

Stuffed tomato

Cut the top off the tomato and carefully scoop out the inside with a spoon. Then leave the tomato to drain upside down. Avoid using a filling that is too wet and place the stuffed tomatoes close together in an oven dish, so they stay upright while baking.
