Spring onions, also known as scallions or green onions, are young onions whose fresh flavour and crunchy texture make them a perfect addition to all sorts of dishes. Cut off the carrot tops

You can use almost the entire plant—the white and green parts. Just trim off the little roots at the bottom and the top of the leaves.
