Shallot

The shallot is a subtle and aromatic variant of the onion, loved for its sweet and mild flavour and delicate fragrance. Shallots can be eaten both raw and cooked. Raw, they add a mild spiciness to salads and dressings, while when sautéed or caramelised they develop a sweet flavour.

Fine chopping

Chop the shallot very finely if you use it in a dressing or vinaigrette, as the flavour can be too strong otherwise.

Tearing eyes

Chill your shallot in the fridge for a while before slicing it, this way you reduce tearing eyes.
