Lesser known but definitely not to be overlooked: purple asparagus. By growing above ground, it develops its striking purple color. With a slightly sweeter taste, it’s delicious when lightly blanched or grilled. The perfect way to add flavor and color to your salads!
Purple asparagus doesn’t need to be peeled.
It’s normal for the purple colour to change when you cook them: they turn dark green with a purple hue. So don’t worry—you’re doing it right!
You can shave the purple asparagus raw and plate them nicely with a little lemon juice, olive oil and some Parmesan.
