Salsify

Salsify, also nicknamed “maid’s sorrow” because of the tricky peeling, is a true winter classic. Beneath its black skin lies a soft, pale yellow core with a delicate, nutty flavour. It’s delicious in mash, soup, gratin or simply stewed. Tip: peel it under water or wear gloves to avoid sticky hands. A forgotten vegetable that definitely deserves a spot on your plate!
